Wine Review: This pale gold colored Icewine from Cave Springs in Canada was very well-received by the Tasting Panel. It opens with a golden raisin and fresh pineapple bouquet with hints of ginger ale and mild apricot. On the palate, this wine is medium bodied, balanced and medium sweet. We also noted how it had a nice mouthfeel, almost silky. The flavor profile was a tasty baked spiced pear with notes of lemon meringue pie, ginger ale and honey. We also picked up some hints of pineapple and cream soda. The finish remains sweet and its flavors linger for a while. The Panel suggested enjoying this dessert wine on its own or with crème brûlée. Winemaker Notes: Explosive aromas of Sultanna raisins, poached pear and comb honey rise overtop nuances of, apple crumble and candied orange. The palate starts off lusciously sweet with unctuous flavors of pineapple, dried apricot and mandarin orange. A citrus note and discrete thread of acidity tightens the mid-palate and balances a lengthy, intense finish replete with nectarine, fresh honeycomb and allspice. Pair with foîe gras, Gorgonzola or Stilton, crème brûlée, mince pie, pecan pie, or Baklava.
