Wine Review: This deep ruby colored Cabernet Sauvignon based blend from Canvasback opens with a black raspberry and cinnamon bouquet with hints of pencil shaving and red plum. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is bright and fresh. The flavor profile is black plum and oak blend with notes of graphite and dark chocolate. We also detected hints of strawberry and orange towards the end. The finish is dry, and its acidity and tingly tannins linger nicely. Some of the Panel members would drink this Cab blend in the near term on its own with a cigar. Those that prefer a food pairing would match it with burnt ends or Morimoto’s sticky sesame spareribs. Winemaker Notes: While the first swirl offers enticing red fruit aromas of plum, raspberry and Bing cherry, as it opens up, deeper elements of blackberry and cassis are revealed, along with hints of savory bay leaf, juniper berry, graphite and crushed rocks. On the palate, this wine is classically structured, with a lush entry and expansive, mouth-filling tannins framing the voluptuous red and black fruit flavors. As it draws to a close, hints of sarsaparilla, vanilla and cream emerge, mingling with the rich blackberry flavors for a long, resonant finish.
