Wine Review: The deep purple colored Cabernet Sauvignon from Washington State opens with a fragrant black currant bouquet with hints of red plum and craisin. On the palate, this wine is medium plus bodied, pleasantly round and juicy. The flavor profile is a red currant and a red plum blend with notes of mild minerality and oak. I also detected some hints of vanilla and herbs. Its tannins do creep into the palate towards the very end. The finish features those drying tannins that build-up and stick around for quite some time. This Cab would benefit from some decanting. I would not sit on this wine long as the fruit is just right, now. I would pull it out this summer and pair it with marinated steak tips or a thick and juicy Angus burger with sautéed mushroom and Swiss off the grill. Enjoy – Ken
Winemaker Notes: Black cherry and toasted oak aromas lead to fruity flavors of plum and Vann cherry. This is a velvety smooth wine with a finish of oak, earth and berry pie. This viscous wine will coat your pallet, pairing perfectly with game meats and roasted pork.
