Wine Review: This Cabernet Franc based sparkler from the Loire Valley in France is a pale salmon color, with occasional tiny bubbles. There is an interesting bouquet of cherry pits, yeasty brioche, peach, flint, mandarin orange, and jasmine. Very frothy on the palate, it is slightly creamy, medium-minus bodied, dry, with crisp medium acidity. There are flavors of strawberry, green apple, chalky minerality and a hint of cranberry. The mineral driven finish is refreshing, dry and long with some very light tannins. This approachable bubbly would pair well with grilled shrimp with tropical fruit salsa. - Mark
