Wine Review: This dark red colored entry level Cabernet Sauvignon from Caymus opens with a dark cherry and red plum bouquet with hints of rhubarb and a touch of craisin. On the palate, this wine is medium plus bodied with plus acidity. The mouthfeel is round, bright, fresh, and juicy for a Cab. The flavor profile is black cherry, black pepper, and black licorice blend with notes of dark chocolate and tangy black plum. I also detected hints of oak, oolong tea, and kitchen spice. Its flavors, acidity, and dusty tannins stick around for a while on the finish. I would give this spicy Cab a little air before pairing it with a Carolina pulled pork platter. Enjoy - Ken
