Wine Review: This deep purple colored Cabernet Sauvignon from Bianchi opens with a toasted coconut and black currant bouquet. On the palate, this wine is medium bodied with medium acidity. We also found it to be balanced, soft, and smooth. The flavor profile is black cherry-cola and minerality blend with notes of cedar, toasted coconut, and baking spices. The finish is rather dry and its tannins build-up and stick around for a quite a while. The Panel would pair this Cab with Roy's rib roast. Enjoy – KWGTP
Winemaker Notes: This wine shows an intense red tone with purple hues; it is lively and elegant. As a great example of Cabernet Sauvignon from San Rafael. In the nose, the aromas that stand out are those of spices, such as black and red peppercorns, and red bell peppers together with traces of black fruits, as well as a mineral attribute, so typical of Finca Asti. These are perfectly blended with the delicate vanilla and chocolate expressions obtained from the wine’s contact with new French oak barrels. It is a superb wine in the mouth, with great structure and complexity, presenting a very rich mouthfeel, with a balanced finish and gentle tannins, which will surely allow this wine to continue aging into the next decade.
