Wine Review: This light straw colored Champagne with fine streaming bubbles is Excellent! It opens with a red cherry and strawberry bouquet surrounded by bread dough notes. On the palate, this wine is medium bodied and has nice balanced acidity that evenly coats your mouth. You can tell right away this is a very refined Champagne. The flavor profile is a tasty brioche and lemon blend with notes of almond and a touch of apricot. The finish is dry and its flavors drift away nicely. This Excellent Champagne would pair perfectly with oysters or sushi. Enjoy – Ken
Winemaker Notes: Fine yellow color with reddish brown glints characteristic of mature Pinots Noirs. The nose is intense, marked initially by pink grapefruit, vineyard peach and then damson plum followed by more suave and exotic fruits. A nose with race marked by maturity and complexity. Rich and elegant on the palate, the Besserat style is preserved and the creamy effervescence blends together in this dynamic Champagne. There’s mineral, salinity and slightly bitter notes on the finish that is both massive and elegant. Its natural elegance means it can adapt to many situations and it will also be perfect as an aperitif. Its full force will be revealed with meat dishes including braised veal tenderloin or beef rossini with wild mushrooms.
