Wine Review: The Cuvee des Moines is this well-aged golden-salmon hued Champagne. The nose is reminds of a well-made strawberry cobbler. The bouquet is strawberries with caramelized honey, on top of baked bread. The mouth is tart strawberries and lemon mousse, intermingled with chalk and limestone. The acidity knocks you off your feet, but it leaves your palate refreshed and craving more. The finish doesn’t just linger, it endures. Persisting for quite some time. This is has been one of Besserat best efforts yet. Enjoy on its own or with steak tartare. - Nicolay

Winemaker Notes: The colour is a soft pink with salmon highlights. Fine froth forming a creamy ring in the glass. The nose is generous, intense and refined, with very marked notes of small red fruits, especially wild strawberry. It carries suggestions of almond and redcurrant jelly. As the wine opens up, there are notes of lime and hawthorn blossom. Good weight on the palate. Initial impact is slightly acid, then red fruits are back to the fore with blackcurrants and redcurrants. The finish is delectable and delicately spiced. Delicious as an aperitif. Also ideal with desserts such as mousses or red fruit, and brioche.
