Wine Review: This light yellow colored Champagne displays lots of bubbles. It opens with a mild bread dough bouquet with a hint of lemon. On the palate, this wine is medium bodied and slightly acidic. The flavor profile is a lively lemon with notes of minerality and a touch of green apple. The finish is quite dry and its flavors linger for some time. I would pair this nice sparkler with broiled scallops. Enjoy – Ken

Winemaker Notes: The colour is a very pure bright yellow. A froth of light bubbles forming a discreet ring in the glass. Intense nose revealing fresh citrus notes admirably matched with floral notes (honeysuckle, acacia) and well-developed toasted aromas. Ample, well-structured palate. The minerality of these great Chardonnays harmonizes magnificently with hints of dry fruit (apricot) and honey notes appearing in mid-palate. The finish is fresh, persistent and light. A champagne for special occasions, an ideal accompaniment to light dishes, seafood and fish.
