Wine Review: This slightly opaque and dark ruby colored Cab will appeal to readers who like big fruity Cabs and Shiraz. It opens with a black raspberry bouquet with a hint of oak and black currant. On the palate, this wine is full bodied, balanced, and fruit forward. The flavor profile is an extracted blackberry with hints of black raspberry and black pepper. The finish is dry and its moderate oak tannins are sticky and linger a while. This wine would pair well with a NY strip steak. Enjoy – Ken
Winemaker Notes: Laurie blended the lots of Cabernet Sauvignon to highlight Knights Valley's characteristically bright black cherry fruit. The wine also has toasty oak, vanilla, cedar and smoky aromas accented by a pretty background of pink peppercorn, cocoa and mint. Small amounts of Cabernet Franc and Petite Sirah were added for additional complexity. A full mouth of sweet, zesty and rich black fruit is supported by nice bright acidity and ripe tannins.
