Wine Review: This very dark ruby Cabernet Sauvignon opens with a black cherry and oak bouquet with a hint of cola. On the palate, this wine is full bodied, balanced and savory. The flavor profile is a cherry and black raspberry blend with notes of toasted oak and mild minerality. I also detected hints of herbal tea, cinnamon and plum. The finish is rather dry and its tannins build-up and stick around for quite a while. This Cab really improved and came together even more on day Two. So, I would decant it first and then pair it with grilled Angus steak tips. Enjoy – Ken
Winemaker Notes: Our Napa Valley Cabernet Sauvignon displays layers of wild raspberry, black cherry and juicy black plum followed by complex nuances of more brambly elements like savory wild sage, fresh mint and forest floor on the finish. The tannins are full and round giving the wine a silky, smooth texture and mouthfeel, with a delicate structure complementing the mouth filling flavors. Nicely integrated baking spice notes of cinnamon and brioche from toasted oak barrels are interwoven through the aromas and flavors, complementing the lengthy finish.
