Wine Review: This deep garnet colored Pinot Noir opens with an inviting black cherry, vanilla, and cola bouquet with hints of strawberry and cedar. On the palate, this wine is medium bodied with nicely medium acidity. The mouthfeel is round, rich, and savory. The flavor profile is stewed black plum, dark chocolate and cardamon blend with notes of clove and red cherry. We also detected hints of integrated minerality and a touch of tasty cured meat. The finish is dry and dusty tannins linger and last for a very good time. The Panel would pair this bolder styled Pinot a Colorado lamb chop or duck confit. Winemaker Notes: This wine has a Pyrenean cherry color with brilliant velvet tents. The nose is very elegant, or we discover notes of bitter orange marmalade combined with wild blackberry jelly. It develops a pretty unctuous mouth where we discover aromas of fresh black plum figs combined with chocolate and coffee beans. The aromas are supported by a spice weft where we find notes of cumin oregano thyme and it also has great complexity a great length, a wine cut by aging. Pair with roast beef or Kobe beef.
