Wine Review: This opaque and pitch black Cabernet from down under opens with a fragrant black currant and blackberry bouquet with a hint of oak. On the palate, this wine is medium bodied, balanced and easy to drink. The flavor profile is a mineral infused black currant with notes of licorice, black pepper and gentle oak. The finish is dry and its mild dusty tannins linger for a little while. I would pair this Aussie Cab with beef brisket. Enjoy – Ken
Winemaker Notes: Deep Red with magenta hues, this wine is almost opaque. Archetypal Cabernet aromas of blackcurrant, blackberry, cedar and tobacco leaf leap from the glass. A beautiful rich palate follows showcasing perfectly ripened Cabernet fruit married to fine French oak. The fruit expression is quite voluptuous even at this early stage of development and combined with the tannin and acid balance will ensure a richly rewarded cellaring experience. This wine will develop great complexity across many years. CUISINE: Roast lamb with rosemary and garlic.
