Wine Review: This pale gold-colored white blend from Au Bon Climat opens with a pineapple and baked Bartlett pear bouquet with hints of papaya and vanilla wafer. On the palate, this wine is light plus bodied with integrated medium acidity. The mouthfeel is balanced, smooth and seamless. The flavor profile is a very tasty oak influenced Anjou pear with notes of lemongrass and white tea. We also detected hints of grapefruit and oak. The finish is dry, clean, and its flavors and acidity linger nicely. The Tasting Panel would pair this white blend with a creamy baked halibut or with crab-stuffed sole. Enjoy – KWGTP
Winemaker Notes: Hildegard has a texture, complexity, and distinctiveness that cannot be found in a single white wine varietal. This Burgundian-minded blend of 50% Pinot Gris, 45% Pinot Blanc and 5% Aligote is exciting to try each vintage. The 2020 is rich yet zesty, starting with aromas of lemon, baked apricot, cream, and honeysuckle on the nose. The palate is layered in hazelnut, lemon confit and unabashed oak flavors, proving creamy in texture yet blasted with persistent acidity.
