Wine Review: This bright straw-colored Pinot Gris and Pinot Blanc blend opens with a tropical bouquet featuring papaya and nectarine with hints of lime zest. On the palate, this wine is medium plus bodied with nicely integrated acidity. The flavor profile is a tasty saline and tangerine blend with notes of Squirt soda. I also detected hints of lemon verbena and chalky minerality. The finish is dry and drifts away nicely. Everyone who tried it, loved it. We all felt this refined white wine would pair well with baked Dover sole. Enjoy – Ken
Winemaker Notes: The lovely aroma of vanillin and hazelnuts from the oak and the mouth-coating richness makes for a wine that seems like a top-notch Chardonnay. The fruit profile is more melony than Chardonnay and the aromas are more flowery than Chardonnay. Food matches that work with Chardonnay would work fine with Hildegard.
