Wine Review: This light-yellow colored Chardonnay from Au Bon Climat’s Historic Vineyards Collection is impressive. It opens with mild lemon-lime bouquet. On the palate, this wine is medium bodied, slightly acidic and mouthwatering. The flavor profile is a lemon and mild apple blend with notes of nicely integrated minerality. I also detected hints of Bosc pear mixed in as well. The finish is dry and its delicate flavors drift away nicely. This Chard is very food friendly and would pair well with Chicken St. Timothy. Winemaker Notes: The flavor profile for this well-structured Chardonnay is in the subtle pear and apple realm with accents of lavender and anise from the time in barrel. The citrusy notes of lemon and orange will evolve into more of a mineral and saline quality. Over time, additional flavors and aromas will emerge as the wine expands. As a young Chardonnay, this wine pairs well with any fish, salmon to trout.
