Wine Review: This pitch black colored Cabernet Sauvignon from Napa Valley opens with a fragrant blackberry and black currant bouquet. On the palate, this wine is medium bodied, balanced, easy going and approachable. The flavor profile is a tasty black currant with notes of mild black licorice. I also detected hints of black cherry, gentle oak and a faint touch of espresso. The finish is dry and its moderate tannins stick around for a little while. This is an interesting Cab, in that it is not big in terms of flavors. That said, it requires a food with fat because of the tannins. So I would pair this wine with a cowboy cut prime rib. Winemaker Notes: 2012 was a great year for Cabernet in Napa. My goal was to make a soft, approachable wine that's elegant yet impactful. The 2012 Atalon Cabernet Sauvignon is opaque dark ruby in color. Flavors of black cherry, blackberry, and black currant lead into cocoa powder, spice, and integrated oak nuances. The wine has great depth and a richness to the black fruit flavors. The mouthfeel is soft and velvety, with a lengthy finish highlighted by refined tannins.
