Wine Review: This deep midnight purple colored Cabernet Sauvignon from Aperture opens with blueberry and blackberry bouquet with hints of potpourri, black plum, and vanilla. On the palate, this wine is full bodied with medium acidity. The mouthfeel is balanced, smooth and rich. The flavor profile is stewed black plum and graphite blend with notes of blueberry, chewy tobacco, and oak. We also detected hints of English breakfast tea, marionberry, a dash of pink peppercorn. The finish is dry, and its moderate dusty tannins are nicely prolonged. The Tasting Panel would serve this Cab with New York strip steak or with braised short ribs. Enjoy – KWGTP
Winemaker Notes: Focusing first on the Cabernet fruit from our mineral-rich, volcanic soil sites nestled on the hillside slopes in the Alexander Valley. This vintage’s blend is uniquely crafted with delicate inclusions of Cabernet Franc, Malbec, and a small hint of Merlot and Petit Verdot showcasing intense black fruits enriched with lengthy velvety tannins. - Winemaker Jesse Katz
