Wine Review: This dark ruby colored Cabernet Franc from Andrew Murray opens with a blackberry, mild cedar and forest floor bouquet with hints of dried cherry and black plum. On the palate, this wine full bodied, balanced, smooth and has a nice mouthfeel. The flavor profile is a tasty blend of strawberry licorice and boysenberry with notes of coffee and black plum. We also detected hints of red currant and fig mixed in. The finish is dry and its fine-grained tannins drift away nicely. The Panel suggested pairing this very good Cab Franc with a filet mignon or braised rabbit. Enjoy – KWGTP
Winemaker Notes: The 2018 vintage expresses rich flavors of fresh summer plum, brambled blackberries, crushed gravel, and lilac with a cooling herbaceous undernote. We balance the tannin structure of this wine by fermenting in tank and pumping over twice a day. This promotes a softer, more gentle extraction. We complement this by aging for 20 months in 25% New French oak to really allow this wine enough time for the tannins to soften before bottling.
