Wine Review: This pale straw-colored Champagne opens with lots of fast streaming bubbles. On the nose, it features a bread dough and almond bouquet. On the palate, this wine is light bodied, pleasantly acidic and zesty. It also nicely coats your mouth. The flavor profile is a mineral infused sourdough with hints of lime and almond. The finish is dry and its acidity and flavors linger nicely. This would be a nice celebration Champagne to toast with. It would also pair well with oyster and grilled swordfish. Enjoy – Ken
Winemaker Notes: Brilliant pale gold, with tight bead and persistent mousse. Green pear, apple and toasted bread on the nose, with distinct wet stone minerality. Lush creamy mousse upon entry. Rich, full and crisp, with warm toasty elements. It displays intense minerality and great depth of flavor. It closes with the length and persistence of a Burgundian style Chardonnay on the finish. With dinner, it deserves to be enjoyed with delicate dishes such as a Sole "Meuniere," or halibut.
