Wine Review: This deep purple colored Petite Sirah opens with a black plum bouquet with hints black olive, oregano, and mushroom. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is balanced, round, intense, and savory. The flavor profile is black plum and black tea blend with notes of oak and dark chocolate. We also detected some hints of olive, espresso, and oak in the mix. The finish is dry and its big and bold dusty tannins stick around for very long time. The Tasting Panel would pair this Petite Sirah with a well-marbled ribeye. Enjoy – KWGTP
Winemaker Notes: Consider this my exercise in Practical Demon Keeping. Petite Sirah the Monster. Tannic as hell and so dark it will stain your soul! From head-pruned hillsides of the west side of Paso. The goal is to take the monster and dress him up and make him presentable at dinner. I try not to over-extract and find the balance between the fruit and tannin. 100% French oak helps soften the savage beast, but we coax the darkness with a heavy toast on the wood. Serve with grilled meats and other things you may find in the dark…
