Wine Review: This opaque and midnight black colored Cabernet from the Knights Valley is rather impressive. It opens with an attractive mild leather and blueberry bouquet. On the palate, this wine is medium bodied, well balanced and smooth. The flavor profile is a delicious blueberry and black cherry blend with hints of gentle oak and a touch of black currant. The finish is dry and its mild tannins are pretty dry and fade away nicely. This Cab was a crowd pleaser and did not last long. It would be a perfect match for a filet mignon in the near term. Winemaker Notes: The 2008 Helena Dakota Cabernet Sauvignon is a wine with a beautiful, deep, intense dark ruby color. It has a nose that is very well developed with black fruits, spice and hints of licorice. On the palate, it is very complex, rich and heavy from the beginning with elements of blackberry, black cherry and currants, along with a hint of cumin. Persistent and lingering spice, with very fine and elegant tannins and a long mineral finish, this a wine that can age for 20-plus years. Before 2013, decant for full enjoyment.
