Wine Review: This dark maroon colored Cabernet Sauvignon from Alpha Omega is excellent! It opens with a dark chocolate and cherry bouquet with hints of boysenberry, roses, and coffee. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is nicely balanced, smooth, polished, and viscous. The flavor profile is a tasty mild black currant and red licorice blend with notes of menthol and black cherry. We also detected hints of red beet, bacon, stony minerality, and spice. The finish is dry, and its flavors, acidity, and moderate tannins stick around for a very long time. The Tasting Panel would decant this wine in the near term, before enjoying it by the fire. With food, we would pair this Cab with braised short ribs. Enjoy - KWGTP
