Wine Review: This very dark ruby colored Cabernet Sauvignon from Alpha Omega opens with a chocolate and black cherry bouquet with hints of dark rum, oak, and Chinese 5 spice. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is balanced, smooth, and seamless. The flavor profile is a graphite and cassis blend with notes of red cherry and loam. We also detected hints of red licorice and Dr. Pepper. The finish is dry, and its flavors, acidity, and well-managed tannins are very long and nicely sustained. The Tasting Panel would pair this Cab with an Irish beef stew or prime rib. Enjoy - KWGTP
