Wine Review: This slightly opaque and deep ruby colored Cabernet Sauvignon from Alpha Omega is a bit like a chameleon. It initially opens up on the smooth and gentle side, but with some aeration it releases a lot more of everything from acidity, fruit and tannin. As a result, what initially appeared to be a near term drinking window, turned into a cellar dweller that will last for years. It opens with a mild black currant and pencil lead bouquet with hints of black licorice and black cherry. On the palate, this wine is full bodied with integrated medium acidity. The mouthfeel is nicely balanced, super smooth and seamless. The flavor profile is graphite and extracted black currant blend with notes of oak, black pepper, and black olive. We also detected hints espresso, Baker’s chocolate, and black plum. The finish is very dry and its bold tannins built-up quite a bit even after the aeration. The Tasting Panel would decant this Cab for a while before pairing it with a well-marbled ribeye steak. Enjoy - KWGTP
