Wine Review: This midnight purple colored Cabernet Sauvignon opens with a black cherry pie and stone dust bouquet with hints of menthol and moist pipe tobacco. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is nicely balanced, round and savory. The flavor profile is a crushed stone and black licorice blend with notes of menthol, black cherry, and cola. We also detected some hints of gentle oak, oolong tea, and black pepper mixed in. The finish is dry, and its tingly acidity and dusty tannins build-up and stick around for quite some time. The Tasting Panel would pair this Cab with Roy’s rib roast or with braised short ribs. Nose: Aromas of blackcurrants, olallieberries and wet potting soil are accented by notes of saddle leather and rye bread.
