Wine Review: This pitch-black colored flagship Cabernet Sauvignon from Alpha Omega is terrific! It opens with a black currant and black cherry bouquet with hints of gentle oak and dark chocolate. On the palate, this wine is full bodied with medium acidity. The mouthfeel is smooth, well balanced, lush, and juicy. The flavor profile is black cherry and black currant blend with notes graphite and oolong tea. We also detected hints of oak, black licorice, blueberry, and baking spices mixed in. It is a very complex wine. The finish is rather dry, and its dusty tannins are very extended. The Panel would pair this Cab with short ribs or with a filet after decanting for a long while.
