Wine Review: This midnight blue colored Cabernet based blend opens with a blueberry and acai berry like bouquet with hints of eucalyptus, currant, and coffee. On the palate, this wine is full bodied, extremely well balanced and smooth. The flavor profile is a delicious black cherry and ripe black currant blend with hints of plum and some earth tones. The finish is dry and its big tannins sail away nicely. The panel suggested pairing this impressive Cab with shredded flank steak with bourbon infused yams. Enjoy - KWGTP
Winemaker Notes: Cabernet Sauvignon is the core varietal of Napa Valley. Cabernet likes the heat and sun of Napa Valley so it can reach ripe aromas and tannins which make the varietal very exciting. Although, as with every wine, the balance between tannins, acidity, mouth feel and aromas has to be respected. In light of this, we add a touch of Merlot for softness, Cabernet Franc for spice and Petit Verdot to strengthen the wine.
