Wine Review: This bright medium purple colored Cabernet Franc from Chinon opens with a red raspberry and cranberry bouquet with hints of crushed gravel and rhubarb. On the palate, this wine is medium bodied, slightly acidic and displays an Old-World savory style. The flavor profile is a stewed plum and dried herb blend with notes of red pepper flake and red raspberry. We also detected hints of blueberry, black tea and stony minerality towards the end. The finish is dry and its flavors and moderate sticky tannins are nicely extended. We would pair this slightly rustic styled Cab Franc with beef bourguignon or a grilled veal chop.
