Wine Review: This very dark ruby colored Cabernet Sauvignon from Acumen is Excellent! It opens with a very fragrant and inviting black currant and cranberry bouquet with hints of moist pipe tobacco, black cherry, and cedar. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is nicely balanced, very smooth, polished, and structured. The flavor profile is a tasty black currant, black tea, and oak blend with notes of crushed stone minerality and blackberry. We also detected hints of dark chocolate, clove, and anise. The finish is dry, and its well-managed dusty tannins are nicely sustained. The Tasting Panel would serve this Cab with Roy’s rib roast. Enjoy – KWGTP
Winemaker Notes: Gracefully vibrant and alluring, this wine displays lovely aromas of currant and crème de cassis, as well as subtle notes of fresh bay leaf, laurel, and wild sage. On the palate, Edcora Vineyards' firm tannins and Attelas's finely tuned acidity provide a seamless framework for the juicy cherry and ripe berry flavors, with hints of dark chocolate and roasted coffee adding depth and nuance to the long, elegant finish.
