Wine Review: This wine tends to be a very consistent wine each vintage. We were quite impressed with the 2006 vintage when we tried it this year at Newport. This very dark opaque purple wine opens with a very inviting vibrant black cherry bouquet. On the palate, the wine is smooth, well balanced, with savory and delicious dried black cherry flavors with hints of black raspberries as well. The finish is dry and its well managed tannins fade away very nicely. This would be a great wine to enjoy with a NY strip steak. We had it with yummy short ribs with a tasty brown sauce. Enjoy – Ken
Winemaker Notes: Powerful aromas of ripe blackberry and dark cherry, with notes of vanilla, cocoa and rose petal. In the mouth, the wine exudes richness and a finely-grained “cocoa” texture, with low acidity expressing breadth and richness on the palate. Flavors of chocolate, dark berry fruits and the classic cabernet cassis are supported by the texture of fine-grained tannins. Our 2006 bottling of Napa Valley Cabernet Sauvignon is dark, opulent and supple, and clearly expresses the Caymus style. - Chuck Wagner
