Wine Review: I recently tried the 2002 and now the 2003 vintage of this wine. Both wines are terrific wines. The 2003 is more approachable and ready in the short term. This rich dark purple wine opens with a big spicy blackberry bouquet with hints of menthol. On the palate, this wine is rich, well rounded, and shows concentrated dusty blackberry flavors with hints of chocolate, anise, and bacon. The finish is very very dry and shows fine tannins and is quite prolonged. We felt this wine would pair perfectly with venison or other wild game meals. Enjoy – Ken
Winemaker Notes: The 2003 vintage of Elivette has a layered, complex structure built predominantly on Cabernet Sauvignon. The wine is laden with aromas of baking spices, cocoa, sweet vanilla, licorice, black cherry and berry fruit, with subtle floral notes of stone fruit blossom. On the palate, the wine has a solid, polished attack, with pretty berry fruit and elements of pepper and licorice. The tannins are supportive, but soft and malleable. The wine’s bright acidity adds to the lively and elongated finish.
