Wine Review: This ink red colored Cabernet Sauvignon from Seven Falls opens with an inviting black raspberry, blackberry, eucalyptus, tarragon and oak bouquet with notes of chocolate. The full-bodied palate includes plum, blackberry, oak and black licorice. I also detected hints of strawberry. The tannins were well-balanced and the finish was dusty and dry with some black licorice shining through. I would pair this Wahluke Slope Cab with a cheddar burger slathered in grilled onions and mushrooms. – Joe
Winemaker Notes: The 2015 vintage of Seven Falls Cabernet is loaded with ripe fruit flavors of black cherry, boysenberry and other black fruits. It is layered with notes of black tea, mint, herb and spice. This concentrated, full bodied wine has a smooth lasting finish. Pair with Bolognese sauce, Moo Shu pork, or grilled flank steak.
