Wine Review: This slightly opaque and very dark ruby colored Cabernet Sauvignon from Knights Valley opens with a red currant bouquet with hints of mocha and a touch of cranberry. On the palate, this wine is medium bodied with medium acidity. The mouthfeel is balanced, round and approachable. The flavor profile is a blackberry and cedar blend with notes of stony minerality and black tea. I also detected some hints of black licorice and chocolate. The finish is dry and its mild tannins and flavors drift away nicely. This Cab is food friendly and easy to drink. You can pair it with your favorite juicy burger recipe or with a meatball hoagie!
