Wine Review: This pale copper Blanc de Noirs opens with lots of tiny streaming bubbles. On the nose it displays pleasant red cherries with hints of strawberry chiffon pie, wet slate and lime zest. On the palate, this wine is light bodied, slightly frothy, with medium acidity that is in check. The flavor profile is a walnut and Brazil mix with notes of mild strawberry, lime and red plum. There is nice minerality and faint cola mixed in as well. The finish is between extra dry and dry. We felt this sparkler would pair well with stuffed mushrooms as an appetizer or roasted mushroom and goat cheese tart as a first course. Enjoy - Ken & Jeoff
