Wine Review: This very dark purple Cab opens with an attractive black currant and blackberry bouquet. On the palate, this wine is medium bodied, nicely balanced, harmonious, and elegant. The flavor profile is an appealing blend of black cherry and blackberry with notes of menthol mixed in. The finish is quite dry and its tannins show some excellent length. Our mini group of tasters thought this wine would pair perfectly with a nice thick grilled ribeye. Enjoy – Ken
Winemaker Notes: The "Signature" Cabernet Sauvignon has been Chappellet's flagship wine for more than three decades. From its cocoa and coffee layers to its fresh herb notes and voluptuous fruit flavors, this wine displays a balanced and graceful expression of mountain‐grown Cabernet Sauvignon. The wine’s dark plum and sweet fruit core is supported by vibrant, bright cherry aromatics, well‐structured tannins, spicy oak and an earthy minerality.
