Wine Review: This dark ruby colored Merlot from William Hill opens with a mild black plum and cherry bouquet. On the palate, this wine is medium bodied, balanced, smooth and easy going. The flavor profile is a pleasant mild plum with notes of gentle vanilla oak and faint blueberry. I also detected a touch of cola towards the end. The finish is dry and its flavors and moderate tannins are nicely prolonged. This Merlot is food friendly and would pair well with a bacon and mushroom burger or with a wild boar bolognese sauce. Winemaker Notes: Our William Hill Estate Central Coast Merlot is reminiscent of a bold Cabernet Sauvignon, with its rich flavors and substantial mouthfeel. Aromas of blackberry, black cherry and toasty oak set the stage for a palate of decadent black cherry, pepper and chocolate.
