Wine Review: This Syrah from Pax is very very dark purple in color. It opens with a shy mild blueberry bouquet. On the palate, this wine is full bodied, very well balanced, and smooth. The flavor profile is a savory mild spicy blueberry with hints of blackberry in the background. The finish is quite dry and its very noticeable tannins are extremely persistent and long lasting. This baby of a wine is an infant and still needs time, maybe years to develop. Once it opens, I fully anticipate this wine to be even better. However, if you are impatient, serve it with a thick cut grilled NY strip steak. Enjoy - Ken
