Wine Review: This pitch black colored Syrah from Pax is very very good. It opens with a raisin and mild blackberry bouquet. On the palate, this wine is full bodied, balanced and smooth. The flavor profile is a concentrated blackberry and oak blend with hints of dark chocolate, black currant, and espresso. The finish is dry and its flavors fade away nicely. This Syrah definitely improves a great deal with aeration. It would be a nice fireplace wine to pair well with a sharp cheddar cheese. Enjoy - Ken
Winemaker Notes: Black Pepper and blackberries fight for dominance in the aromas of this very full bodied wine from this small, special site. Very concentrated, with ripe tannins and layers of fruit and spice.
