Wine Review: Merriam's Cab Francs have become a bit of a cult wine. They are consistent and always draw rave reviews when presented in a portfolio tasting. I recently covered the 2007 Windacre at Colonial Spirits in Acton. It sold out during the tasting. It is opaque and pitch black colored and opens with a fragrant and appealing blueberry bouquet with a hint of beet and black raspberry. On the palate, this wine is medium bodied, balanced, and smooth. The flavor profile is a tasty blueberry and plum blend with hints of black raspberry. The finish is dry and a little acidity and very fine tannins show up and drift away nicely. This Cab Franc is very food friendly and would pair well with wild boar ragu over fresh fettuccini. Winemaker Notes: A dark garnet red color, with a bouquet of violets, blueberry, currant and tobacco on the nose. On the palate, a note of bright acid with bakers chocolate, light spice, and cassis giving way to a structured tannin, and a long finish with cassis and chambord-like raspberry.
