Wine Review: This very dark ruby Cabernet Sauvignon opens with an enticing blackberry, wet slate and leather bouquet that has hints of ginger. It is medium to full bodied with good balance. On the palate this wine is dark, with flavors of black cherry, black plum, dark chocolate and black tea and with some hints of light minerality. It has tight tannins that stick around in the long finish. A nice strip steak, heavy on the pepper, would pair well with it. - Mark

Winemaker Notes: Cabernet Sauvignon literally re-routed Gary Eberle's career path. Eberle was on his way to becoming a geneticist when he discovered how seductive and powerful Cabernet Sauvignon can be. Now with 36 years dedicated to producing wines from Paso Robles, Eberle's determination has made a mark on the industry and attracted significant attention. The palate on the 2013 vintage is full of rich dark fruits flavors of cassis, black cherry and cola with slight herbaceous notes and a long finish. The lush qualities of this wine combined with its velvety tannins make it a perfect wine to pair with a herb crusted prime rib, grilled lamb chops or a beef tenderloin with a blue cheese sauce.
