Wine Review: This pitch black colored Cabernet Sauvignon from Dylan's Ghost opens with mild blackberry and cassis like bouquet. On the palate, this wine is medium bodied, balanced and rather fruit forward. The flavor profile is a black cherry and ripe cassis blend with notes of boysenberry and a hint of stewed plum. I also detected some faint oak and minerality behind the fruits. The finish is dry and its fruit flavors and moderate tannins show very nice length. This Cab would pair nicely Bistro du Midi's duck breast with charred field carrots, fennel and a blood orange reduction sauce. Enjoy - Ken
