Wine Review: This almost clear colored traditional-styled Champagne with small bubbles was well received by the panel. It opens with a musty apple, bread dough and sake like bouquet. On the palate, this wine is light bodied and slightly acidic. The flavor profile is a tart green apple with notes of bread dough, lime, minerals and hints of clementine. The finish is dry and its flavors fade away nicely. The panel suggested serving this Champagne with baked honey ham with pineapple or sushi. Enjoy – KWGTP

Winemaker Notes: The colour is a very pure bright yellow. A froth of light bubbles forming a discreet ring in the glass. Intense nose revealing fresh citrus notes admirably matched with floral notes (honeysuckle, acacia) and well-developed toasted aromas. Ample, well-structured structured palate. The minerality of these great Chardonnays harmonizes magnificently with hints of dry fruit (apricot) and honey notes appearing in mid-palate. The finish is fresh, persistent and light. A champagne for special occasions, an ideal accompaniment to light dishes, seafood and fish.
