Wine Review: This dark ruby colored Cabernet Sauvignon from Alpha Omega opens with a classic black currant bouquet with a hint of black cherry and oak. On the palate, this wine is full bodied, balanced and smooth. The flavor profile is a mild mineral infused black currant with notes of oak and black cherry. The finish is dry and its substantial oak tannins build up and last for quite a long time. This Cab would benefit from some decanting in the near term. I would serve it with a dry aged well-marbled ribeye. Enjoy - Ken
